Carefully with a lot of care, hard work and selection through the year we pick up full matured grapes in the harvest time, macerated for 3 days and then fermented in stainless steel barrels for 12 months. Later in the cellar with less touch as possible we follow nature idea of wine. Through the whole year no sulfide was added. The wine is exfiltrated and a minimum amount of sulfide was added just before bottling. ZELÉN is an indigenous local grape from the upper Vipava valley.
It is a wine whose main feature is the subtlety of herbal flavors like Rosemary and lavender with a hint of fruity aroma. He has a enjoyable freshness reminiscent of dry white flowers. Combined with a wonderful versatility and sustainability in the taste he invites us to discover his complexity over and over again.
