Winemaking: Only clean and ripe grapes were picked into small 20 kilo crates. Gentle handling of grapes with reduced air contact of juice and wine. Two different vinifications: modern technology (reductive condition) and traditional aging in big French oak barrels (2000 l).
Vineyards: Vines were pruned and trained using single guyot to ensure optimal sun exposure in vertical vineyards 8 to 35 years old. Soils are clay/sand on marl.
